What are you having for breakfast?

This is a very important meal of the day. I eat dinner for lunch, but am stumped what to have for breakfast. Now I am eating organic quick oats. It is very good. Sometimes I make scrambled eggs on pumpernickel. I do not own a microwave and never will. So I do not frozen breakfast sandwiches .... I have diverticulosis and totally avoid processed (cold cuts..ham etc) and prepared meals. Some days I make a smoothie with almond milk, greek yogurt, canned peaches or frozen blueberries, or fresh banana with seeds taken out and 1 teaspoon peanut butter (natural or organic). And I have coffee...organic decaf and organic caffeinated. smiling smiley

This morning I had a slice of rye toast, a hard boiled egg, and V8 juice. I eat two meals a day. Breakfast in the morning and lunch/dinner in the middle of the afternoon.
Today I am having cereal, with milk and fresh blueberries. Aldi usually has pints of blueberries at really good price. Other days I may have eggs and toast or rye toast with salmon/cream cheese spread (expensive, but a treat). In summer I may buy 2 peaches or 2 bananas at a time for more, less expensive, fruit for my cereal, using 1/2 peach per day. When there is a great sale, I will pick up raspberries or blackberries. No sugar on the cinnamon cereal, btw. (Be sure to check the carb count before buying cereal. That way, it will be easy to manage carb intake per meal.)

My typical breakfast 90% of the time (or really, brunch...usually eat around 10-10:30 am for first meal) consists of a hard-boiled egg, 1/4-1/2 of an avocado (depending on size of avocado), 1 small mandarin orange, a fiber bar and 2 or 3 fresh pitted prunes. With this I drink a cup of unsweetend vanilla almond milk, and a glass of powerade zero/gatorade zero into which I stir some L-glutamine amino acids and collagen peptides powder. When I don't eat the above-mentioned foods, I will either have a bran-type cereal with fruit or a bowl of flax/oatmeal hot cereal, each with some additional fruit. Drinks stay the same. Then I usually don't eat till suppertime, although at times I do eat something with an additional 100-150 calories till supper, but not always.

Breakfast for me 90% of the time involves scrambled or fried eggs with one or two sides like toast, biscuits, tortillas, potatoes, sausage, bacon, fresh fruit, etc.

For breakfast I like to mix it up. Today I had a 'deconstructed PB and J' (a piece of whole wheat toast with sunflower seed butter, sprinkled with flax seed and sunflower seeds, and topped with clementine pieces. And a cup of coffee.

I start almost everyday post COVID with Columbian coffee with a splash of milk and sugar. Most days I skip breakfast. If DDS are around, they will offer a spinach, cheese omelette with mushrooms if available. Some days, a bowl of oatmeal. When I commuted to work regularly, I might purchase a bagel or croissant smothered in butter.
Start my day with lemon water and a dash of honey. Then, tea with a kale or spinach omelet. I swap the omelet with a boiled egg sometimes or a pancake made with grated veggies and oat flour/chickpea flour. I don't have a sweet tooth so savory it is. The only sweet thing I have in the morning is my cup of black tea with milk and honey. I grew up on it. Even on vacations, I will pack a ziplock of my tea and a bottle of honey. Can't imagine waking up to coffee!

1. Veggie pattie, slice of vegan cheese, on a small bun or muffin with mustard.
2. Big Sur Burrito (made by Sweet Earth)
3. Mini Bagel or muffin with peanut butter and hemp seeds.
Travel mug with coffee and non-dairy creamer or almond milk
Speaking of breakfast and coffee...Aldi's has organic ground coffee from Nicaragua, Peru and Mexico. I chose Nicaragua cuz of the packaging. I don't know much about organic coffees and where they are grown other than I do not want to pay $12 to 20 a lb. for it. Aldi's is $5.29 for 12 ozs. The flavor is divine. I mix it with organic decaf due to bladder issues.

Just got frozen fruit and fresh bananas to go with my oatmeal. smiling smiley The oatmeal wears off after two hours, so this morning (when the oatmeal wore off and stomach growled feed me!) I had a piece of organic bread with organic peanut butter. MMMMMM good.

I agree about the cereal. Loaded with sugar and fat and worse false advertising. Bran, protein, wheat and all kinds of BS. I like oats but to opt for a low carb breakfast, I usually make pancakes with chickpea flour. My mom used to make them on weekends when we were little. With time, I have made my own recipes for savory pancakes. Brown rice, semolina, oat pancakes with lots of veggies. Right now, my favorite is soaking brown rice for 4 hours and blending it with a boiled potato. I add grated veggies, salt, and pepper. My daughter loves them for dinner though.
I've cooked with chickpea flour a little bit, but I'm interested in your recipe for pancakes. What liquid do you use? Baking powder? I guess I'm asking for the recipe :-)

1. 3-4 eggs fried on canola oil.
2. A cup of rice or another carb like oats over water microwaved.
3. A bowl of spinach, 1 serving of cheese and a tablespoon of olive oil.
4. A triple espresso with either milk (latte) or just creamer.
5. A couple servings of fruit: bananas, cuties, apples, etc.
6. If I’m still hungry, a cup of Greek yogurt or adding a tablespoon of peanut butter to my oats.

Well yes but it’s not nearly the best, it’s just easy to find. They do make an amazing cheesecake though.

Thanks for the idea of putting peanut butter with oatmeal. This a.m. I had my organic quick oats with fresh banana (seeds removed lol) and 1 T. organic peanut butter. WOW...
I also read on Web M.D> oatmeal reduces risk of colon cancer!!!!!!!!!! My dad died from his diet.
@KathyG.. I use a mix of plain unflavored yogurt (like a big tbsp) and water for a cup of chickpea flour. You could just add water. No baking soda. Just let it rest for 20 minutes so that the chickpea flour absorbs the water well. I add grated carrots, shredded cabbage, onions, (basically any veggie I have) with salt and pepper. I add a ladle full of batter, flattening it with a spatula. Cook both sides on medium high with a lid on. I usually eat with cilantro chutney or Sriracha.
