Barbeque chicken, home made potato salad, spinach salad. We're do for a snowstorm, I just don't accept it. I'm still thinking spring.
I feel your pain. Spring done sprung here with a lot of the trees in full bloom, but winter is rearing it's ugly head for a few days. Sleet is a possibility tonight.

I'm hearing about the bad weather everywhere - we had a week of rain but we're back to sunshine and Spring weather. I'm grilling hot dogs (we eat them on whole wheat hot dog buns to convince ourselves they are healthy!) and baked tater tots.
Enchiladas made with smoked pulled pork barbecue and refried beans, guacamole, chips

Fast and easy out of necessity tonight. Already cooked meatballs in a cream of mushroom sauce, baked potato fries, green beans.
Tuesday is 2 for 1 night at the local pizza place that delivers. Fresh pizza tonight, frozen leftovers at later dates.

A hearty lentil soup. Tried to eat it last night, but the cook must have used old lentils as they didn't get soft. Another 18 hours in the crockpot and they're delicious.

Now scheduling travel shops for the day after Christmas through mid-January.

We did a chicken stir fry with fresh mushrooms, snowpeas, peppers and beans over rice.
Ham, asparagus, roasted teeny tiny potatoes from Trader Joe's and the first of the season sweet corn from FL.

Edited to add: And a salad from sweet baby greens, crumbled goat cheese, strawberries and a honey poppy seed dressing that I'm totally addicted to.

Brunch this morning will be ham and asparagus quiche. Dinner is more ham with potato latkes and peas with pancetta. What could be better than pork? More porksmiling smiley

Kim, did you get the ham from TJ's? I have never like ham until I tried theirs.

Yes, I got the ham at TJ's. First time and I thought it was great. I'm hoping there will still be some Monday so I can buy one and freeze. I hear they only have them around Christmas and Easter.

Your ham and asparagus quiche sounds delicious. I was able to buy my asparagus for 1.69/lb. Hoping it is still on sale this week because I want some more. smiling smiley

Kim
You heard right, just twice a year. Some years they are gone long before the associated holiday. It pays to know when a lot of their seasonal items are expected to be in store and stock up early. I don't always buy produce there, but the asparagus I got yesterday is beautiful. Hopefully the quiche will do it justicesmiling smiley

I don't usually buy produce there either. I bought the potatoes there and I buy pomegranate seeds there. I'll have to look at their asparagus when I go there Monday. I'll bring tissues in case there are no more hams. Hope your quiche turns out great!

Kim
The quiche was even better than expectedsmiling smiley And I hope you don't need those tissues!

Hooters shop tonight it's Burger Night so likely we'll have burgers and Nachos for appetizer.
Lisa, I need tissues! sad smiley Oh well. Trader Joe's is fairly new to me. Though I love the store I don't seem to go there enough to "know" when they are going to have stuff. I will have to pay attention better. I had cooked the ham at my parent's for their dinner and my mom is not a ham person but she loooved that one. That's why I wanted to get another one and freeze it.

Tonight is leftover ham. Tomorrow is balsamic chicken with roasted vegetables.

Kim
Tonight was a 'quick' Steak 'n Shake. Wow. 7 minutes for the table to be greeted at 4PM when the slothful staff was hanging around and the place was about 10% full? (More crew than customers.) 26 minutes for a milkshake and 32 for a burger??? They really need to go back to being mystery shopped!!!
Cheeseburgers and fries, at home.
