If you have many examples of not being paid, it may be time to reevaluate the companies you are working with or some of the ways you are completing shops.
Not counting a couple of slow payers that eventually paid, I will list my problem shops below. I have been shopping for over 5.5 years.
One shop where I really don't understand why it was rejected.
One shop where they contacted me for clarification, but I did not see the request for over a week because of some life issues. They did not pay me, but did reimburse for my product purchase.
Two shops that were rejected, but were clearly things I messed up. In one I had the time date stamp way off, so they did not accept. Another where I purchased the wrong item.
Five shops on a route where I was doing some merchandising and while the directions clearly said to leave the 2 for $5 stickers on the glass with a note that said below are some possible examples, however, you may encounter others. I left the stickers on and then was told the stickers I left needed to be removed, so had to drive around and pull off the stickers, but was paid in full.
And one Freeman hotel!!!!
So in nearly six years, I have had one flat out rejection and one company go bankrupt. The three others that did not get paid I clearly had some of the responsibility. I may be lucky, but if there were that many companies try to scam that often, I would think I would run into more than one issue a year.
