I just saw one today, for the grilled cheese. In all honesty, we liked the cheese one, but didn't at all like the dilly of a one (although we tried that one twice). Which was odd considering the same brick & mortar restaurant made both. Maybe dilly just doesn't have a good food concept to begin with.
I think the dilly one has a good concept, it just stunk the way they executed it. I lived in Dallas for 32 years and love Mexican food.
The quesadilla I got from the ghost kitchen had all the jalapenos in one spot which almost made that part of it uneatable. That also made the rest of the quesadilla bland. The fillings were also meager, flavorless and lackluster.
I thought $12 or whatever for a grilled cheese you would normally get off a child's menu for about $3 wasn't worth the price. It wasn't bad, but I saw nothing to warrant the inflated price. Just IMHO. And I did both of the shops twice. I bowed out the third time they came around.
However, I would do them both again to see if they fixed the issues shoppers brought up and improved the product.
