I was assigned an overnight stay at a luxury hotel. The guidelines say to pay cash for all of the jobs. (restaurant, bar, room service). Does this seem right? Also, no protection for hotel cancellation (unforeseen circumstances)

I've never done an extensive hotel shop like that but it's very possible that they are doing it to test employee integrity. Is the employee pocketing the cash or ringing it up as a regular order.
I just saw a few of these and was considering one but the amount of transactions required seemed crazy. It was a 3 day stay at a very nice hotel but you had to make like 30 cash purchases at several different in-hotel bars and restaurants, in-room dining, etc. At that rate, you'd never even get a chance to leave the hotel!
