Pulled out some sausage from the freezer that needs to be used. Not sure how, will look for a recipe that grabs my attention.
I like to use sausage to stuff hot or medium hot peppers using bread crumbs, parmesan cheese, garlic, onion, and herbs. I cook it in a glass pan in about 1/2 inch layer of tomato sauce with shredded mozzarella across the top and serve with garlic bread for dipping. It's like lasagna without the noodles.
I am doing a hotel shop that does not include dinner. So, I brought homemade chili, shredded cheddar, guacamole and Fritos. Will heat up the chili and cheese, and have guac and chips for dipping while I watch TV. This has got to be the easiest way to earn hotel rewards points yet! Easy report; few interactions; comfortable room; tons of HD TV channels and fast Internet.

Tonight's dinner will be leftover chicken simmered in fresh chicken gravy and served over stuffing. Sides will be applesauce and a salad. Farmers rolls from the deli round it out. No dessert tonight as we are having pancakes topped with peaches and whipped cream for breakfast in the morning.

I made gumbo for the first time. I used venison sausage, shrimp, and long grain wild rice along with the other ingredients. It turned out good, a little spicy but not overbearing.
Turkey burger and Cole Slaw (inside bun), yogurt with an array of fresh berries topped with cool whip.

I am doing a BJ's Brewhouse curbside shop tonight. It's 1/2 off pizza night, so we are going to have a tavern-cut (thin) mushroom and pepperoni pizza, zucchini strings appetizer, salads, and we will split the parmesan encrusted chicken dish (there are 2 breasts).
I'm doing my eat in dinner Wednesday...will get their amazing double boned Pork chop over mashed potato's, veggie and a small Pikoozi......can't wait, mouth watering.

Tonight Husband and I went to 'That' all-you-can-eat chain for his free Veterans Day meal. He was the one to blink first and say next year we will go elsewhere and eat decent food.
For tonight, I took my mom out to a Norms shop. I had a 1/4 pound cheese burger with side of fries, while my mom had a blackened salmon with baked potato, veggies, chicken gumbo soup, and salad.
Chili with cheese melted on top, guacamole, Fritos
A nice, warming supper of a very cold and windy evening.

I am cleaning up charred wood and drywall. We had a small electrical fire Wednesday. The firemen did more damage chopping a hole in my ceiling than the fire did (it burned up my pass-thru window from the kitchen).Even though only a single outlet was involved, and I was able to pull that breaker out of the panel, the city requires a permit and an inspection before we can get our power back on. What should cost less than $100 to rewire is now going to cost $800 or more. Ugh.

I am doing all of the remodel work myself, and meanwhile we have the generator...just not my year. Anyway, so we are cooking fish and veg on a campstove out on the patio tonight.

Me too! 10 minutes later and it would have been a different story. I was headed out the door to an appointment, and my hubby & the cats were napping. It could have been a verrrrry different story. I don't think I could handle losing my son, my hubby, and the cats all in the same year.
