Fiery Quinoa & Black Bean Chili (recipe copied from Souplantation / Sweet Tomatoes). Made at home from scratch and a tomato/avocado salad with balsamic dressing.
I made pizzas from big flour tortillas. They crisp up nicely in the oven if you like a thin crust (and we do.) They are loaded with pepperoni, sausage, onion, red peppers and black olives. Yummy.
Due to snow flurries we carried in Chinese food: beef and broccoli, noodles with tofu in a brown sauce, and steamed rice. All chased down by a pot of tea I brewed myself.
Last night I raided the freezer for some good stuff that I froze after Thanksgiving: roast turkey and giblet gravy. I added steamed carrots and mashed potatoes. There will be another meal like that, plus turkey sandwiches this week.

New recipe, layer thin sliced chicken breasts, spinach, mushrooms, cover with olive oil, broth, cream cheese, cook 20 covered, 25 uncovered, add cheese on top, cook 10 more. It was good, but too much liquid. I will tweak more the next time I make it.
Hotel room service supplied a perfect rib eye steak. homemade mashed redskin potatoes and grilled fresh veggies. I brought some red wine and a little chocolate for dessert. Time for a nice sleep!

I think next time if you layer in some flour tortillas (just 1 or 2) it will absorb the liquid and be quite tasty.

Blaze Pizza. Vegan style. Delivered to my car by a nice kid. They sent me a survey, and I let them know how kind he was.
Made stock from turkey bones yesterday. today I will turn that into soup, with carrots, celery, onions, noodles and, of course, leftover turkey.

Tonight Prime steak tips, grilled romain with Caesar dressing. Red wine, Dave's thin sliced bread. This bread is great, lots of seeds, fiber, and tasty.
I picked up some deli roast beef, sliced thin. I will make a baked potato and also have some of the grilled asparagus that was from today's Red Lobster lunch shop.

CoffeeQueen , what is Albondigas? I love to cook, watch lots of cooking shows, make most dinners from scratch, never heard of this. I think I'll look it up on the Food network.
CoffeeQueen, I just looked up Albondigas in the food network. Turkey soup or lamb meatball soup. Looks really good! How do you make yours?
Meatballs... I want to make some. Do you bake or broil them? Does ot make a difference ?

I usually bake them. I dont know if it makes a difference.
