What are you having for dinner? AGAIN!

After a crazy EOM shopping day I decided not to cook. I froze part of a fresh pizza last week and that is looking like a great dinner idea. I will carry out my original plan tomorrow!

Super Bowl Sunday! Husband has to have Italian cold cuts and Italian stuffed shells with red sauce. Not my usual diet.
I am making my "happy Jack" nachos for an appetizer to go with my husband's beer during the game. I take a slice of jalapeno, a dollop of sour cream, a few slices of turkey about the size of a nacho chip, and Monterey jack cheese, on top of a nacho chip and bake until the cheese is melted (as long as the nacho is still crisp). It's important to use a drier turkey meat and sour cream that's not runny or there is a gooey mess and a soggy chip...I serve with my salsa-mole (cilantro, fresh roma tomatoes, red onion, jalepeno, lime juice, salt, and avocado) to serve atop them. That's actually quite a meal in itself. For dinner I am making a large homemade chicken pot pie for us to share.
First time posting in this section. I consider myself kind of a foodie, ha! I make ground turkey tacos the most out of anything for dinner. Besides w/ the usual lettuce, jalapeno pepper jack cheese, & tomato, I love cilantro, green onions, & avocado w/ it w/ some habanero sauce! YUM!

I also mk some tasty potstickers. I've always used ground turkey for those too, but next time should mk a veggie version w/ mushrooms, scallions, etc. They taste better than the restaurants!
I think today I'll make potato soup with ham. I am really enjoying things with a thick broth right now.
I have had chili in the crockpot for a couple of days. My husband's cousin's wife is Mexican, and she gave me these great chili powders last time I visited them in Phoenix. I seasoned it using that. Sent hubby to the store for sour cream to serve on top...I've got cheddar and tortilla chips to go with it as well. And a small cheesecake for dessert, since I have some raspberries and blueberries in the frig.
If this supper had a name it would be something like: Deconstructed 7-Layer Dip.

I have browned and drained some ground beef. I will mix that with spices and fat-free refried beans. A serving of that mix will be reheated with sharp cheese on top and served with sides of guacamole, salsa, and tortilla chips.
The leftovers will be like money in the bank for nights when I don't feel like cooking.

Tonight will be chicken quesadillas with a chicken hash filling, diced chicken breast, charred peppers and finely diced potatoes, topped with monterey jack cheese and with tomatillo sauce on the side.
Going out for Mexican tonight, my youngest daughter's boyfriend's birthday. Seems like a pretty strong Mexican theme going on in the forum lately, eh?
Yup !! More people than might have been imagined would actually love to see a taco truck on every corner !!!

I've developed a new habit. I make anything I can put in my crock pot. Since I typically get really tired in the afternoon (since having surgery) and need a nap I can go off and leave it for any amount of time and everything is fine. Yesterday I made barbequed chicken thighs in the crock pot and some steamed rice and a salad to go with it.
I love my crockpot too! But tonight it's BJs Brewhouse takeout, yay! I am getting a flatbread pepperoni pizza, salads, and the parmesan encrusted chicken with double broccoli and NO mashed potatoes. Their mashed potatoes have the consistency of glue.
I have some cooked chicken that I will defrost and have with a baked potato and a vegetable TBD.

I have settled on spaghetti with meat sauce since it's the easiest and fastest thing I can make.
JAS, I wish we had a BJS Brewhouse. The only one remotely near is about 1.5 hours away, but I've heard great things about their beer and their menu looks pretty darn good.

The reimbursement for a Dash-In shop yielded supper for tonight: a chicken, bacon, ranch quesadilla and tater tots. (Also, three muffins that I froze for future breakfast use.)

I've got chicken thighs marinating in seasoned buttermilk. Going to bread them and air fry them. Roasted Brussels sprouts for a side dish.

Instant Pot just came out with an air fryer cover. I want to try it. I love appliances that multi-purpose. Although I would never use it as a slow cooker. I've heard it burns on the slow cooker function.

I avoid Crock Pots for a similar reason. They are famous for boiling on low setting. And, a vigorous boil, at that.

I bought a new one last year and it doesn't do that. It also has a "warm" setting for just keeping things warm without cooking them further. So far I have no complaints about it.
