What are you having for dinner? AGAIN!

Last night was home-smoked wild salmon, mashed potato and steamed broccoli. Tonight, planned-over beef enchilada with beans and rice. Yummy !

Last night, chicken teryiaki with roasted brussels sprouts and jasmine rice. The most delicious oranges later with dark chocolate, LOL.

Spam is SO good! When I worked for Hormel, I visited The Spam Museum. I frequently browse the Spam recipe section for ideas. Today I was going to make the Spam Wild Rice Salad, but realized I needed to make the chicken that was in the fridge.

Tonight's dinner is a Ranch Pesto Chicken Hot Dish.

Easter Sunday - Sauce, lasagna, meatballs, chicken parmigiana, broccoli with olive oil and garlic, garlic bread and Tres Leche cake and chocolate/raspberry rugelach from COSTCO. Today is leftovers.

When I sorted out and defrosted the freezer yesterday I found some spanakopita. I will bake that and smoke more salmon to go with it.

I finally used my air fryer! I bought it 2 years ago. I made frozen chicken schnitzel from Aldi's and it was great.
