Something comforting on a cool evening...meatloaf, mashed potatoes, w/ gravy and spinach/arugula salad w/ Russian dressing, a dinner roll, a glass of milk and a small piece of orange/dark chocolate for dessert.
Loving my slow cooker today. I chopped up peppers, onions, garlic. Sauteed them along with chicken breasts seasoned with Adobo, salt and pepper. Added a can of diced tomatoes, salt, chili powder, 1 cup of long grain rice along with the chicken and slow cooked it for 4 hours. OMG, sooooooo easy. I am smelling it now.
Hubby cooked a white bean stew, but didn't allow time for the potatoes to cook completely. I was torn between mentioning the issue or not, but since there's another meals worth I told him that he might want to cook it a little bit more next time. He took the criticism well.

Mexican. Picked this beloved food up on the way home from work to celebrate that jeans are practically falling off of me. I think part of me also celebrates that Donovan Carrillo is the first Mexican Olympian in thirty years, and he has the best attitude. He used all the razzes as motivation. He is as good as a gold medal winner in my book.

We are ready for Superbowl Sunday. Mom arrived with a 10 lb. lasagna. Young ladies made a garden salad, Brownies and stuffed mushrooms. We ordered a 4 ft. Grilled Chicken hero, potato and macaroni salad. Beaus are bringing beer, nachos and cheese. I think I'm going to dip apple slices in chocolate if I can get it together. No preference for the winning team as it is not ours. It's been a long time.....but when it happened, oh, HAPPY DAY! Enjoy your evening every one!
