Yes to the weekend. A most fresh garden salad (I added artichokes), focaccia bread and tortellini. It was just Mom, #2 and me. I love red onions.

I will make a big Garden salad. COSTCO chicken quesadillas (kit), rotisserie chicken, Godiva chocolate cookies. EASY! We love COSTCO.
In honor of Mardi Gras season, red beans and rice (enough for meals tonight and tomorrow). Collard greens on the side because they sounded good. Found out that Youngest Son is coming to dinner and didn't want to make more rice so I threw together a pan of corn bread.

Last night was chicken cutlets topped with sauteed mushrooms and onion and topped with Gruyere and Mozzarella cheese. A sentence like that would flag me and has with some MSCs, LOL. Steamed broccoli and Italian bread with butter. Sliced apples and GS's Aventureful cookies for dessert. Tonight, loaded baked potatoes, spaghetti with turkey meatballs and air fried Brussels sprouts.
I LOVE one-pot meals. Tonight is a new-to me recipe of Tex-Mex Shrimp Casserole. Lots of shrimp, some corn, pinto beans, tomatoes with green chilies corn tortillas, enchilada sauce, cheddar cheese. a side of guacamole and tortilla chips. This will feed 3 people for two occasions, possibly with lunch-sized leftovers.

Pizza! No fuss, no mess worth mentioning, and the time & freedom to work non-stop until the end of the new project situation. (Long story; we have until next Friday to remove or move certain things so as to be compliant with the rules/laws of egress. Pizza now means that much more time and energy after I finish my IC work this weekend.) I, too, love the large batches of yummies. It is efficient! And, I know what I am eating..... smiling smiley

Eeewww. I have my own recipe for Feta Cheese pasta. I use crushed tomatoes, olive oil, etc. and while it's heavy, it's delicious. Well, decided to try the Tik Tok recipe in my Instant Pot. Gross! All of my tomatoes burst and there were scant remnants. Feta cheese was gone/disintegrated as well but there was some flavor. DDs humoured me I think as they had some. DH ate it all, lol. He's the MAN!
Dinner is practically a midnight snack. I worked through the meal time and now I am going to have a quick protein meal replacement shake. Easy peasy.

Meal replacement beverage while at work. I finally got rid of the nasty plant-based stuff that required so much alteration, with so many expensive ingredients, to be made palatable. This product is good to go as is. Yay! I mean, yum!

I did a bunch of cooking today and made beef lentil meatballs and the other half of the ground beef was for beef wontons. Dinner was all about sampling and modifying the mix to make sure that I got the mixes of both the way I wanted them. LOL
