Asian food is sooo my favorite food. I can eat any of it (mostly except some members of the Animal Kingdom lol)
any day and still love it.

I am still teaching myself how to make some of it at home...

my least favorite? American food lol.....exception being my grandmother's dinners of the past.

I'd have to say in order of favorites:

Asian, anything
Italian
Greek
Moroccan
German
everything else

you?

Bare, Oh my... my favorites.. FOOD..

I LOVE greek and mediterranean food.
I like Italian food, as long as there is no pasta involved. I used to love pasta, but 15 years of no wheat nipped that in the bud, now it mostly just makes me gag.
I haven't had any German food since my dad was alive, he always wanted to be German, he was a nazi sympathizer and a Hitler fanatic. What little I remember, I liked. And I love all types of sausages.
Creole is good, and soul food, I love greens (except for collards), beans of almost any kind and okra.
I was raised in Southern CA, Mexican food is a way of life, and I miss it desperately now. I especially miss the chicken dinners from Cardena's Market that was down the street from my house.
My grandmother used to make what we called "stringy roast," it was braised chuck roast with celery, potatoes and carrots. And she made the BEST refrigerator dinner rolls, none of us can duplicate them, and my mother has the recipe and can't do it either. I found a recipe for parker house rolls that comes close, if you don't stick them in the muffin tins and make them look funny.. lol
I don't really know what American food is, almost every kind of food Americans eat originated somewhere else.

I left lots out, I know I did.
My son made me a Cheesesteak sandwich before he left to do gas station shops this evening.
I am a fan of all greens except collards lol - like you, not crazy about kale, but I love the rest,
especially escarole, pea shoot leaves, gai lan and bok choy.

I have been enjoying great Mexican food here because I know once I am back east, it will be slim pickings...thankfully I can cook Mexican food pretty easily.

Here's how I define American food - it's the standard fare everywhere you go in the US:
Appetizers: chicken wings, fried mozzarella sticks, onion rings, quesadillas (American style), potato skins, pizza rolls
Entrees: any kind of salad with meat thrown on top, hamburgers/cheeseburgers, French dip, club sandwiches,
chicken sandwiches, BLTs, steaks, chicken, fried chicken, macaroni and cheese, chicken fingers, chicken tenders, fish sandwiches, fried fish,

This is what I think of - yuck, when I think of American food, greasy stuff you can get at Applebees as one example.

Looks like I'm gonna do a salad with tuna. The bread is ready to go into the oven, just waiting for it to warm up. My son started to make yogurt last night, but didn't follow through, so I believe I have a gallon of spoiled milk in the instant pot. And he's ignoring it.
