Bison burgers grilled outside, topped with aged swiss cheese, on whole wheat buns. This will be accompanied by a fresh salad of spinach, arugula, radish, red pepper, avocado, tomato, olives and dressed with olive oil, red wine vinegar, salt and pepper. Toppings for the burgers will vary by the consumer. Mine will be topped with dijon mustard, relish, spinach and the aforementioned...swiss cheese.

Slow cooker is loaded with chicken thighs, potatoes, carrots in a honey, garlic, soy sauce and herbs sauce. Will add a few fresh green beans later. I made enough for two meals, plus 2 to freeze for later.

Tonight was a sandwich made from brisket that had been cooking for 9 hours.

Last night was spaghetti with a homemade meat sauce.

Night before was fried catfish.

Night before that was a pork loin in the crock pot, roasted asparagus, and a ridiculous baked four cheese macaroni. The pork and mac are my two favorite recipes.

I will have the first variety of soup that comes out of the freezer. I hope that this soup is the great recipe. (We have tried a number of recipes this year and only one was great and memorable.)

As I walked into my local grocery store there was an announcement from the fresh seafood department for crab cakes: buy one get two free! That was calling my name! I will have some with 6 cheese mac and cheese and steamed fresh asparagus. The rest will be frozen for future suppers!

Spaghetti squash tossed in a garlic butter sauce with sides of broccolini. Strawberries and cream for dessert. Just picked the berries this afternoon.
Tonight was a chicken experiment gone bad. Actually I've done it as wings before but tried it as just chicken tenders. Need to cut down on the cooking time is all I'll say.

I did cook up a big batch of chili using ground chicken (some for lunches, some to freeze) that was AMAZING.

I am about to load my small (1.5 qt) slow cooker with a section of pork tenderloin, hoisin sauce, garlic and ginger and set it to low for 10 hours. This is a first step in experimenting with home cooked mu shu pork. All of the veggies that get added to the shredded pork later will be stir-fried: cabbage, carrots, mushrooms. btw mu shu pork freezes very well, so it's great to have a good sized batch, even for a 1-2 person household.

Yes. It was quite good just charred and more than a bit dry.

Tonight is pork loin, asparagus, and rice.

Also had the chicken chili for linch today and it was amazing! Best chili I've ever had.
