Just made the best salad, had it for lunch, and will again for dinner, who ever is interested (so good).
mixed kale/carrots chopped fine, black beans, warm turkey or chicken, celery, hard boiled egg, avocado,
radish's, cranberries, raisens, liquid from beans (2 spoons) and I use a light ranch with a lemon squeeze.

Tis the season to overeat! Tonight's dinner will be served courtesy of a 4 star Beverly Hills restaurant, followed by after dinner drinks in the hotel lounge. Tomorrow night, downtown LA restaurant/brewery. Sunday night, room service at another hotel near the beach. I am going to have to work out twice a day next week.
I am making dry roasted/smoked pork loin in the slow cooker. I will shred that and have some with a little BBQ sauce, some baked beans and mashed sweet potato. Later in the week, I will use part of the leftovers to make layered enchiladas. It makes heavenly enchiladas, .
