Today is a lazy day, so we are having battered fish patties (from the freezer), avocado slice, mango slices, and packaged potato salad. Ice cream or malts later.
Manicotti stuffed with cheeses and spinach, then covered with robust tomato/meat/mushroom sauce, topped with mozzarella, and baked.

Spent the afternoon at the doc for my regular quarterly visit which instead of its usual 30 min took over 2 hrs. Grabbed Subway subs on the way home.
Citrus salad with baby beets and arugula, for me. Husband was not interested and fended for himself.
Pesto over pasta and sauteed shrimp. Maybe some garlic bread.

Crab poppers

'Clean the refrigerator crustless ham and egg pie.' Significant Other has decided he no longer likes frittatas, so change the name, change the pan and voila! Clear the baggies from the fridge of half a red onion, most of a yellow onion, half a green pepper, the red pepper that is wrinkling, the couple of tired tomatoes, the rest of the fresh mushrooms box, half a zucchini. A package of ham dice from the freezer from the last ham I baked, a box of frozen spinach thawed and squeezed dry. The odd bits of cheese--two slices of swiss, one of smoked provolone, the last of an open package of cream cheese and some chunk cheddar with the mold cut off. Eggs and the dregs of the sour cream container. There was even about a serving of leftover mac and cheese. Layer the glass baking dish with everything diced up. Mix the eggs with the sour cream, pepper and basil (adequate salt in the ham) and pour over the pile. Sprinkle generously with shredded sharp cheddar and bake 350 until set up and the cheese browning a bit on top.
A great thing about pesto pasta meals is that they make great cold suppers in summer. It will be near 100 F today, with, of course, high humidity. Cold pesto pasta with sauteed shrimp and mushrooms, assembled and eaten warm (ish) yesterday, will be very welcome tonight. Next iteration may well include diced chicken thigh in lieu of shrimp. Or, maybe, cold home-smoked salmon.

Chicken herb tortellini with vodka sauce.

Both were from Aldi's. The vodka sauce was really good. I have to make it so I will have a non-lush reason to buy vodka.

Home rotisseried lemon pepper chicken and acorn squash baked with butter and homemade mango preserves.
I have lots of yellow rice and fresh broccoli, plus some frozen General Tso's chicken, so that will be a quick-fix supper.

Flash, I love "clean out the fridge" dishes! I make awesome stir frys this way.

Aldi had some excellent, non cured sliced ham. I will have some of that with mac and cheese an fresh veggie TBD. I will freeze parts of the ham and keep some out for breakfast, sandwiches, etc. It's like having money in the bank, and naturally low sodium and chemical free.

Chicken Pot Pie, I like to put grated carrots, onion, and potatoes in mine. The potatoes and chicken were leftovers. Through a little garlic, rosemary and thyme to revitalize. Wales, you are so right. Ham is so versatile and always delicious.

Honny, as a fellow Aldi customer, I hope for a review of that item, please.

I will be trying a new, easy-peasy recipe for seafood guacamole, served with tortillas with either sliced tomatoes or refried beans.

wales, the flatbread was great. It's baked at 400 for 13-15 minutes. I did 15 minutes and that was too long. The flat crust wasn't chewy. The chicken slightly dried out.
