What are you having for dinner? AGAIN!

One of my go to recipes that is quick and easy. Chicken breasts or tenders cut in half or thirds, your preference of herbs and spices (I use garlic, salt, pepper, rosemary, thyme), lay on the bottom of an oven safe pan. Whisk together a box of wild rice with the seasoning, 2 cans of cream of your choice, 1/4 cup of water, pour over the top. Tightly cover, and cook at 350 for a minimum of 90 minutes. Delicious every time.

I'm cooking 2 pounds of chickpeas in the Instant Pot. Will freeze some (in 3-cup increments) and use the rest for a chickpea/roasted eggplant curry.

Tonight's dinner is broiled shrimp, garden salad, home grown peaches that we froze in August, and some rice pilaf.
A bowl of couscous, chicken, broccoli, feta and black olives. (The last of the meat frozen from last week's oven/rotisserie chicken.)

Shrimp Alfredo with chopped Greek olives and a side of steamed broccoli. (I won the lifetime ration of broccoli that a former President raffled off.)

Between the meals at work and the shops, it has been a while sine I have cooked. Tonight, I am going to have BLT from 5Guys.

Friday - Mushroom risotto
Saturday - Enchiladas, rice and beans
Sunday - stir fry w/ fried tofu
Monday - Pasta w/ meatless meatballs
Tuesday - Lasagna soup

All of these are in heavy rotation at my house. I'm getting pretty sick of eating at home every night, but it keeps my weight down.
A casserole of stuffed manicotti and meatballs, maninara sacuce and topped with mozzerella and Parm cheeses. A little garlic brad and red wine.

I make a similar dish but instead of cream of something soup, I use a simmer sauce and regular brown rice. I also add frozen veggies.

Delicious every time!
