Home made pizza with broccoli, mushrooms, & cauliflower because we are still trying to use up the too-many vegetables I bought last week.
I made chicken soup with carrots, scallions, garlic, lentils, bay leaf, parsley, s & p and basmati white rice. I can eat better today. My diverticulosis has not been too good. When it flares up I cannot eat. But I ate today..... smiling smiley

Sausage and peppers. The original goal was crock pot ginger beef, but I didn't want to wait. I'll have the ginger beef for lunch tomorrow.

--1-2 pounds beef strips
--1/2 cup broth, white wine, beer, or apple juice. I used chicken broth.
--1 yellow onion, cut in rings
--1 whole head of garlic, peeled
--1/2 t ground black pepper
--1 inch peeled and grated ginger

The Directions.

Spray the inside of your crockpot with cooking spray, or put a bit of olive oil in the bottom. Add your meat. Chop up the onion, and peel all of the garlic. Throw that into the pot. Add the ginger and black pepper. Top with whatever liquid you plan on using.

Cover and cook on low for 6-8 hours, depending on how thick of a piece of meat you are using, and whether or not it's frozen. I used fresh beef strips and it cooked VERY quickly on low---it was completely done after 6 hours.

I should have used a smaller crockpot. This is a good amount of food for a 4qt. If you are going to use a larger crockpot, consider adding a whole cup of liquid.

Make sure to use very fresh ginger. Mine was shriveled. I had to use powdered ginger. The dish is in the fridge, untouched.

Tonight's dinner was chicken and mushrooms.

Saw some of your posts and other mentions of traditional 'money foods' for the new year. I am not superstitious, but I have some of those foods. No need to go to a store and fetch them. I must wonder: considering protein, fiber, and fermentation of some of the foods, are they contributing to our wealth by contributing to our health? Inquiring minds want to know.

Tonight will be another crock pot dish: cream cheese chicken. It's also a way to use up some fresh carrots.

I made basmati rice with baked chicken thighs with scallion, grated carrot, olive oil, s/p, chopped peppers and chopped shrooms!! MMMmmmm smiling smiley
DiGiorno self rising frozen pizza. Two Supremes and 2 Four Cheese. DD #2 made a delicious, fresh salad. DD made a yummy cherry cheese cake.
