Spring mix salad from Costco was yukky. I doctored it up with salt, pepper, grated cheese, tomatoes from our yard, avocado oil and balsamic vinegar. The greens were chewy to me. That was it for tonight as an appetizer for the family. They liked it. DH went out with the ladies for Chipotle. The ladies got a BOGO somehow. He was amazed, lmao. Brought home a sofritas bowl with tomato salsa, brown rice, corn, cheese, fajitas for me So good!

Chili con carne with black beans, a few taco chips, guacamole. This is a nice, spicy chili made with some chipotle chili powder and cumin added to regular chili powder. I will melt some shredded sharp cheddar on top.

The like options are getting scarce. Tonight, I plan on Tofu braised with Hoisen Sauce coupled with sauteed broccoli and Jasmine rice.

I'm thinking pork chops browned in the skillet with seasonings. I'll add some corn and salad. So ready for cooler weather so I can make soups and stews.

Empty nest tonight. DH served wine and made a cheese, crackers, grapes and strawberry charcuterie board for us tonight. My Mom is here through the rest of this week and loved it. She wouldn't drink wine and had apple cider, lol.

Tik Tok pasta. Did not use the Instapot directions and it was delicious. Pizza delivery. I prepared our own toppings; mushrooms, green peppers and sliced tomatoes (from our garden). Yummy.
We sorta,' kinda', had a dinner..... for giggles, I wanted to try two different restaurants but turn each visit into a snack for two persons. For our so-called appetizer, we had a fish meal and shared everything. Our so-called entree was a selection of Asian foods that we shared. The best part? The tea from the Asian restaurant. I am on my way now to search online for what kind of tea it is.

Because I'll be at a convention this weekend, then come home for a day and then on Tuesday leave for a couple of weeks I've been working on emptying out the refrigerator. Tonight was a frittata with the last of the sweet potatoes, the last of the white potatoes, onion, garlic, and all of the eggs. That made four servings, so I don't have to cook tomorrow night :-)

New-to-me-soup. I chose one of many variations for a well-liked recipe. I think it scares hubby to look at soup that is not just tomato red but is bright and flavorful with seasonal ingredients.

Teryaki chicken, Jasmine rice, steamed broccoli. Fannie Mae S'mores Mix, sliced juicy peaches and apples for dessert.
New-to-us chicken casserole. In order to get all the promised textures and flavors, we had many steps in a lengthy procedure. Hubby hates this. It is not like throwing something on bread and calling it sandwich. But he did specific tasks for me and at the end pronounced it good.

Mom arrived with a 20 lb. tray of eggplant parmigiana and 5 loaves of bakery Italian bread. So delicious! Young ladies made an arugula and tomato salad and no bake protein balls (Kodiak mix - yuk). Bananas, apples and grapes.
Pork ribs cooked in oven, spinach, scalloped potatoes.
Will probably order a Greek pizza.

Aldi had specials on 2 heat-and-eat items: shredded pork BBQ and mac and cheese. I will also heat up some pork and beans and have enough for tonight's supper and a couple of upcoming lunches.

The default dish: black olive and onion Alfredo w/ quite a bit of minced garlic and lotsa' ground black pepper. I luvluvluv this! Hubby does not like the black pepper so much and did not like the basic dish. I did not like the basic dish either, finding that it needed something with body, such as leftover chicken. (We both forgot to take chicken out of the freezer and did not generate leftover chicken. We stuck with the planned menu and ended up with... a dish that can be improved in a few ways even if we do not add the traditional chicken or shrimp. Assorted veggies, herbs, and if it is not blasphemous or something, more cheese could be combined and make a substantially better dish.) In all, a good default experiment that filled my little heart with ideas for improved future versions.
