What are you having for dinner? AGAIN!

Tried a new recipe. I made Italian Wedding Soup, but changed up the ingredients and it became Asian wedding soup. Scallion garlic meatballs, veggies and some noodles for a hearty one pot dish.

Spanakopita (Greek restaurant takeout), PITA bread stuffed with baked Falafel (I sprayed with oil but a bit dry), red onion, Romain lettuce, tomatoes with choice of hot, Tahini or Tzatszki sauce. Apple pie from a neighbor who buys from a famous place out of state. So yummy.
Another disappointing night.. the split pea soup got started late, so my "dinner" was a cheese quesadilla. But I had a really good, BIG breakfast, so it's not all bad. Dinner tomorrow will be split pea soup and grilled cheese sandwiches.

last night we had a veggie and rice pilaf baked into halved acorn squashes all covered with a savory mushroom sauce...
was very good
also, fruit salad

weekenders come tonight, so she'll have to whip out her best recipes for the weekend lol.

Staying home to cook all day. Freezing most of it except lunch - avocado toast on deli sourdough, with garlic herb and cheese spread, shaved cheddar and Gouda, topped with chopped green onion and pink Himalayan salt.
Making 2 soups - white bean and kale, with hot Italian sausage, and butternut squash and apple soup. Also beef lasagne, and mini meatballs sautéed in EVO with Rao’s marinara.
My BF only wants food/meals for Xmas. He’s a foodie so the pressure is real.

This is a bit too fancy schmancy for me. I’m headed to MTS’s house…
maybe it just sounds that way? it was just chopped raw salmon pieces sitting on tiny chopped cucumber pieces over sticky rice, drizzled with miso

Making lots of homemade soups in this frigid weather. Had some black bean soup with sour cream and 1/2 avocado. A new one I tried was chestnut soup which was much simpler than I thought it would be. A little mirepoix and cooked chestnuts with extra optional garnishments.
Chicken Piccata, Pasta e Piselli (a.k.a. spaghetti with garlic, olive oil, peas and Parmesan cheese). Nice Red wine.

well.. we went to BWW, I got something that looks and feels a lot like lab grown chicken, and my son got a skimpy beercheese steak sandwich. Not their best work by a long shot.
I am not a fan of BWW, so I can relate.

I should eat something tonight, but I probably won't. we did 3 gas stations and a grocery shop in TN, then got a Pizza Hut job on the way home. So I've technically eaten food, not good food.. I should put some stuff in the crackpot for dinner tomorrow.

Lets see.. Wednesday we had pot roast with potatoes. One of those kits from Kroger with the meat and potatoes and instructions to cook it in a crackpot. It was exactly what my son needed to make a real good meal.

Yesterday I had to go driving all over the state. I didn't get breakfast, and I left late, so I couldn't even do the QT shop on my way out. So after I got my gas stations done, as I was driving home I had a big mac and fries, then I went to QT and got a soft pretzel and iced coffee.

Tonight, I had a salad with chicken, tomatoes, crunchy onions, and flavorless pepperoncini.
Chicken vegetable soup, French baguette bread. So yummy! My Mama loved it! :-)
It's after 23:00 so it's unlikely that I will get "dinner." My son is far far away doing lighting audits and seemingly not concerned that I need to get some clean underwear before I can go to bed. I had coffee and a smoothie when I woke up, and some herby rye crisp type crackers with cheese and salami earlier, and a BIG bowl of cereal a couple hours ago. So I'm pretty sure that I've had all of the food I'm likely to get today.

I tried to have blackeyed peas and cornbread.. My son came in here with a piece of cornbread and butter on a plate one time. I told him that I asked for blackeyed peas and cornbread. NOT a huge hunk of cornbread for no apparent reason. It's New Year's Day after all, why am I not eating blackeyed peas? I don't like collards except when my friend, Pidie, makes them, but I haven't seen her in almost 30 years. I've seen lots of methods and tried most of them, I can't get it right. And I think I'm fresh out of just about any kind of leafy greens, even spinach, right now.
My darling child took me to a new Mediterranean place up in TN for my birthday up in Pulaski, TN for dinner. I had a HUGE falafel sandwich and a piece of baklava! I'm a fat and happy camper!!

What is a summer roll? Sushi? Sashimi?

Yesterday was a blitz, we did 3 grocery shops, and 7 gas station shops, 3 of which were dark audits.

We stopped for dinner at a place called Burger and Wing Factory in GA. I got a very acceptable cheeseburger and some very good fries (that desperately needed salt and pepper).

Did a QT and got my son an ice cream and an iced coffee for me. And two circle jerks that currently require a purchase from the beverage cooler, so now I have a bottle of water that I won't drink and juice beverage that I may never see again.

So we had dinner, and then we got dessert..

it's veggies and noodles and some kind of meat
all wrapped in the rice paper and served with a dipping sauce
they're a cousin to egg rolls and spring rolls, but they aren't cooked (except for the meat)

I love them...don't usually eat them in winter (I am weird) but this place nearby is sooo good.

Bare, that does sound delicious. I think I've seen folks make those with shrimp in them on tv.

I'm not big on dipping stuff, I'm not adjusting to everything including sandwiches and pizza being sold with dipping sauce. You should see some of the weird faces folks make at restaurants when I say that I don't need or want any dipping sauces.

And for the record, buffalo sauce is not supposed to drip off chicken wings it's supposed to be a VERY light coating, just barely there.
My Cambodian friend makes a delicious rice paper wrapped or lettuce wrapped chopped shrimp, bean sprouts, thingie that she brings with a dipping sauce. I cut them up into bite sized pieces one time and she was very upset with me as she said I was supposed to dip them. LOL. So yummy.

Just to add, I detest and will not eat mayonnaise-hello MLZ . GROSS to me. DH consumes too much of it.
I actually prefer them with shrimp versus pork strips or tofu strips...
I taught myself how to work with rice paper by watching YouTube videos...
I kinda have the method down now....
so I do make them at home.
My dipping sauce is easy: soy sauce, garlic, peanut butter, ginger whipped together.

I have occasionally cut them into slices versus eating the roll by hand.

To me, it's the perfect hot weather meal. Maybe I have been missing the hot weather.. lol.

The only other sauce I make is mustard blended with honey - have used it on veggies or to brush on fish before cooking.
