Not sure if I'm describing them correctly, but BitGym is an app with videos of walking/running/biking trails. It provides you scenery to look at while you are on your your treadmill or stationery bike. What makes it special is that the scenery moves according to your pace.

As a side note, mine is a paperback with both covers not attached anymore. I was thinking of buying a new one but I didn't know they revised it - does that mean the recipes aren't the same. My favorite sweet and sour apple beets are from that cookbook. Soooo good and no sugar added.

Pesto Ranch chicken is in the crock pot.

I went to the market to get the ranch dip seasoning. I stopped by the dented can section to see what was there. They had pesto for $1.24 and turkey stock for $1.

I couldn't sleep last night so I was on my phone looking up easy ways to poach eggs. I hadn't poached an egg in over 2 decades and forgot how. So I made my husband eggs Benedict for breakfast with crispy hashbrowns (scattered so they were nice and brown and then pressed back together) and fresh asparagus spears. But, instead of making the eggs Benedict with Canadian bacon, I used hot-smoked salmon slices (not slimy like the cold smoked lox), and I cut up pieces of cooked shrimp into the Hollandaise sauce to get warm, which I spooned over the poached eggs with the asparagus spears propped up across the top and the remainder of the sauce drizzled over them. Thanks to Alton Brown and other sources online for my perfectly poached eggs! Hubby was soooo happy and surprised! I actually plated them attractively. My food almost always tasted good but I am not known for presentation. This time it was beautiful and tasty.

I am debating on whether to go do any work or not. No deadlines until Saturday, and it's about 23 degrees out with light snow.

You use the handle of the slotted spoon to get the water to swirl, which gathers the whites to wrap around the yolk. Break the egg in bowl and pour it in the center of the pan instead of breaking the egg diectly into the pan. And yes, some white vinegar, too. Look up Alton Brown's method.

That was the second method I tried. The whites come out stringy and the yolk breaks apart.

You have to have the water at just the right temp. If it's boiling it breaks the yolk, if it's not hot enough, the egg sticks to the bottom of the pan.
Wow, that all sounds like a lot of work for a weird runny egg. Today I was amazingly productive. I did all the dishes that had piled up in my absence, did a load of laundry and yeah, that's about it. I took a long nap and came downstairs and put a berry cobbler in the oven. before I was so rudely interrupted living my life, I had cooked some berries that i bought on sale. I pulled them out and tasted them and they are delish. I had a weird pack of some cobbler product I had bought on a whim to try. You mix it with 1/2 cup of water and pour the batter in the bottom of a baking dish and then your fruit of choice with syrup goes on top. That is in the oven. I was then exhausted and I sat down here to whine.
I am compiling a grocery list and I remembered to add the pack of ranch dressing to the list. I have to try that chicken. What veggies do you guys think would go well with it? I like to roast veg with my meat.
It's really no more work than frying an egg, only the pan is easier to clean afterwards because it's not greasy. And there is something about a perfectly poached egg that goes so well with creamy Hollandaise sauce that both run into the nooks and crannies of a toasted English muffin...
I like poached eggs and make them a couple of times a week. I only add vinegar when poaching more than a few. Only a couple of eggs, I don't. Otherwise, the vinegar flavor can permeate. Sometimes I create a whirlpool, other times I don't. The water should be simmering, not a rapid boil. The amount of eggs added to the water has to be considered as they drop the temperature when added. An uninterrupted 2 1/2 - 3 minute simmer is perfect.

Don't like Hollandaise. I serve the eggs on top of buttered toast or English muffin. Sometimes, I add a protein (beef or pork) and maybe a brown-butter sauce.
I only add a few drops of vinegar. It didn't affect the flavor at all. I poach one egg at a time just because I am "new" at it (and when I did it years ago I was cooking only for myself). I adore Hollandaise. Bearnaise sauce is pretty yummy, too. I have a fresh tarragon plant in my indoor herb garden. Tonight we had crab legs and I set aside some crabmeat for the next Benedict. Should pair nicely.

I use this recipe for roasted squash. I'm not a squash person but i will eat it this way. I love the spice mix and dump all of it on the squash.

JAS, a poached egg is only easy if you know how to make them. I don't, so I end up with a runny, gloppy mess in my pot. I have wasted many eggs trying to perfectly poach one.

CQ, I made whatever veggies I had in the freezer. The Pesto-Ranch chicken tasted great with Aldi's frozen fire roasted vegetables.

Last night I paired the pesto/ranch chicken with couscous, with steamed broccoli on the side. Great way to use the sauce from the chicken!

That recipe looks sooo good. I love the brown sugar addition to set it apart from the rest. Will be trying that one for sure.

So, I'm totally not a plater. I can totally enjoy a lovely plated plate, but the first time I was watching a cooking show where the plating actually made a difference or not to me, as in, whether I would try something versus not try something... was this. Plated peas? I wish. I need to have one or two servings daily of plant-based protein beverage that includes pea and other non-flesh proteins.I absolutely refuse to "present" my smoothies. I just want to drink them and tally my daily intake of nutrients.

Ton of errands, changed banks and due to the deposit of large checking/savings, got $600.00 for the change, yes, no report, took awhile, but done. Oil change to find I need new windshields, back brake light, tried to sell me a new battery and tire, enough already, now on computer and making arrangements to pick up a few things my broker took out of house which I'll do tomorrow.
