3/4 lb of pepperoni pan fried in its own grease... drained most off ... threw in 1 lb frozen veggies, a cup of tomato sauce, garlic, parsley, basil, and half cup of Parmesan cheese and cooked it until the veggies were not frozen... washed it down with crystal light tea...
no ... no leftovers... no wonder i am gaining weight...

For Sunday football games I made a layered dish of refried beans mixed with seasoned beef, guacamole, sour cream, enchilada sauce, and sharp cheddar. With taco chips that made a good supper then; leftovers tonight!

i threw a bunch of pepperoni and shredded mozzarella on two beef and bean microwave burritos... nuked it for 2 min then scooped a healthy portion of nacho cheese sauce on top of that... had two helpings
Lucky once more, have to do a class tonight which means my husband and I are going to a nice little chinese restaurant we enjoy. Shrimp and veggies here I come.

Had a going-away party at work so dinner was chicken riggies, lasagna, Mediterranean pepper salad and turtle cake for dessert. Posted the recipe for the turtle cake in the recipe thread. I was in a food coma after eating a piece of it. Very rich.
Probably Mu Shu Pork and green beans. That will provide lots of left overs for the next few nights. It is going to be a bobsled ride to the end of the coming week!

Rummaged in the freezer and found a batch of slow simmered beef in mushroom gravy that I made a couple of weeks ago. Yummy with mashed potatoes and steamed spinach!
