Picked up my Mom this PM and she brought huge trays of Pancit with shrimp, Lumpia and Chicken Adobo for me from her Filipino neighbor as I had helped her with a personal issue. So, so, so delicious. DH was in heaven and so was I.
Last night I made a Crock pot 4lb., lean pot roast with red mini potatoes, large carrot chunks, onion, fresh rosemary with beef broth and Lipton soup mix base. Caught it at the perfect time, cooked medium, with the remaining trimmed fat fully cooked and melted like butter. The rest sliced easily without being overcooked. Best pot roast ever.
Next will be a trial run of a turkey breast Thanksgiving dinner with all the fixin’s.
I'm so hungry now after reading this Minime....sounds wonderful.

I had leftover chicken tortilla soup - it wasn't bad, but it doesn't sound nearly as great as your roast.

Slow cooked sauce and meatballs, spinach/ricotta/garlic rigatoni, bruschetta, italian bread, sauteed broccoli with garlic. My Mom made a big pot of butternut squash soup for those who want (like me and my ladies). Inclement weather days are good for the soul.

Parmesan crusted chicken, risotto with peas, mashed kabocha (never again, LOL). Haagen Daz vanilla ice cream bars from Costco.

You can all have a good laugh--Jack-in-the-Box opened up for the first time ever near my house. Husband & I went there for dinner. Now I can check that off my bucket list. If it were offered as a shop and I wasn't busy one evening I would return.
Cousins came over for a simple dinner of meatball sandwiches w/provolone and fresh rolls from a local Italian bakery.
Home made Eggplant Parmesan, salad, good crusty bread from a local bakery and a glass of local vino.

Made with eggplant, tomatoes, basil, oregano, greens, bell and banana peppers, cukes, onions, garlic and carrots from the garden, a light balsamic herb vinaigrette created from memory (without measuring), and a dusting of well aged cheese.
that sounds great....

here we had leftovers - you know, what's leftover in the fridge from the weekend's meals - which meant
spinach quiche, rice, steamed spinach
@BFB I love spinach anything! Empty nest tonight and loving it. I am making myself a grilled cheese and tomato sandwich. You know DH will be getting take out, ha ha ha.
I made homemade cream of spinach soup today and it was good.....

The deal with spinach is that our local veggie farm is getting ready to shut down for the season, so I've been eating all their spinach before they do....lol - it's not like grocery store spinach - it's very earthy and flavorful. I think they shut down next week - November 1

So anyway, I went to get stuff from them today....along with a little butternut squash, some carrots and maybe the last fresh tomato of the year....

grilled cheese and tomato is my snowstorm meal lol. Fingers crossed not soon lol.
Butternut squash ravioli (hand made but bought), lightly steamed broccoli and then sauteed with olive oil and garlic. Going to slow cook chicken veggie soup overnight.
Last night I made champagne chicken, saffron rice and baked asparagus with olive oil & sea salt. Peach Bellinis and pound cake for afters. I won’t order this meal out b/c I won’t ingest or support the use of veal demi glacé. Regular beef DG is just as good.

I’m making a roast chicken (on sale for under $1/lb thus week). I put rosemary, lemon, and garlic in the cavity and brush the outside with olive oil, fresh ground pepper and sea salt so the sling gets crispy.

Also bake a casserole dish of veggies with bakers alongside for the last hour.

Also assembling an Apple cobbler to go with small batch, real cream, local vanilla ice cream and a cup of Earl Grey for dessert…which is also good with a spoonful of that amazing vanilla ice cream.

(That’s Earl Grey “hot” for any Trekkies amongst us).

I had a slice of our local famous upside down pizza - I was out running errands and needed a quick meal.

Oh and I also shared a couple Old Bay chicken wings.

Sounds good but lets not skimp on dessert. I’ll take the ice cream as well.
Although I still can’t bring myself to stuff a bird cavity with anything, I’m not opposed to eating said bird with the listed added ingredients. Stuffing (breaded) is a whole other matter. No thanks. Please don’t be offended should I pass that along without partaking.
BF ~ the basic recipe is 2 pounded chix breasts, seared on one side in 2 tbs. butter and flipped. Add a pinch of S&P to your liking. Add a package of sliced button mushrooms until softened. Add 1 tbs regular demi glacé (store bought) and 3/4 cup Chablis. Reduce by half. Add 3/4 heavy cream, reduce by half. If you want to elevate it, organic chix, clarified butter, and ‘real’ heavy cream makes it a bit more savory.
Going to prep soon with the time I will have by not having a stressful, time consuming commute home. Lemon Chicken Paillard, roasted Brussels sprouts, Baguette bread. All I have for dessert is Haagen-Dazs ice cream bars trail mix and pumpkin spice mini pretzels.

@Minime - I totally concur with the stuffing of a bird. Not for me and never will be. :-)
