Picked up my Mom this PM and she brought huge trays of Pancit with shrimp, Lumpia and Chicken Adobo for me from her Filipino neighbor as I had helped her with a personal issue. So, so, so delicious. DH was in heaven and so was I.
Last night I made a Crock pot 4lb., lean pot roast with red mini potatoes, large carrot chunks, onion, fresh rosemary with beef broth and Lipton soup mix base. Caught it at the perfect time, cooked medium, with the remaining trimmed fat fully cooked and melted like butter. The rest sliced easily without being overcooked. Best pot roast ever.
Next will be a trial run of a turkey breast Thanksgiving dinner with all the fixin’s.
I'm so hungry now after reading this Minime....sounds wonderful.

I had leftover chicken tortilla soup - it wasn't bad, but it doesn't sound nearly as great as your roast.

Slow cooked sauce and meatballs, spinach/ricotta/garlic rigatoni, bruschetta, italian bread, sauteed broccoli with garlic. My Mom made a big pot of butternut squash soup for those who want (like me and my ladies). Inclement weather days are good for the soul.

iced tea
Parmesan crusted chicken, risotto with peas, mashed kabocha (never again, LOL). Haagen Daz vanilla ice cream bars from Costco.

Um, I was available on Sunday…Why was I not invited? Was it something I said?
I’m always up for future shindigs…just so you know…
You can all have a good laugh--Jack-in-the-Box opened up for the first time ever near my house. Husband & I went there for dinner. Now I can check that off my bucket list. If it were offered as a shop and I wasn't busy one evening I would return.
Cousins came over for a simple dinner of meatball sandwiches w/provolone and fresh rolls from a local Italian bakery.
