I have made an astonishingly hot batch of chili with beans. Will add lots of cheese and have guacamole on the side. Dark beer to sip.

Lisa, I take it you prefer thin crust? I grew up believing that "Chicago style pizza"
was thin crust because that’s what my Dad made in his restaurant (which the Chicago
Tribune rated #1 in thin crust for several years when they did those ratings). He
developed his recipe after having pizza in New York, which he said looked like a
sewer cover.

I got home from the holiday with no leftover turkey. So, I am roasting several turkey thighs and will make gracy. Add stuffing and squash and it will be dinner. OH, plus cranberry sauce.

A seriously cold day here. Am in the mood for some homemade soup and stuffed crescent rolls. Also a pumpkin cheesecake.


Stuffed Crescent Rolls

1 can spinach or 1 box frozen chopped, liquid well drained

1 cup cooked rice

1 cup shredded sharp cheese

1 tablespoon grated parmesan cheese

1 small onion finely chopped

3 eggs

1 teaspoon onion powder

1 teaspoon garlic powder

½ teaspoon plain salt or seasoned salt

Mix all together well.


Unroll a tube of crescent roll dough (I use a 2-roll segment as a rectangle of dough)

Place spoonfuls of spinach filling onto center of dough rectangle and roll up like logs.


Bake at 375 for 12-15 minutes or until a lovely brown.

Whatever leftovers can be found in the fridge! There are a couple of choices. Plus I'll make a salad, since I'm trying to be healthy. (I'd rather go to Cettie's though for some stuffed crescent rolls)

So where is the pumpkin cheesecake recipe? C'mon Cettie, pretty please?
Pumpkin Cheesecake

1 3/4 cups graham cracker crumbs
3 tablespoons light brown sugar
1/2 teaspoon ground cinnamon
1 stick melted salted butter

Filling:
3 (8-ounce) packages cream cheese, at room temperature
1 (15-ounce) can pureed pumpkin
3 eggs plus 1 egg yolk
1/4 cup sour cream
1 1/2 cups sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon fresh ground nutmeg
1/8 teaspoon ground cloves
2 tablespoon all-purpose flour
1 teaspoon vanilla extract


For crust:

In medium bowl, combine crumbs, sugar and cinnamon. Add melted butter. Press down flat into a 9-inch springform pan. Set aside.

For filling:

Beat cream cheese until smooth. Add pumpkin puree, eggs, egg yolk, sour cream, sugar and the spices. Add flour and vanilla. Beat together until well combined.

Pour into crust. Spread out evenly and place in oven for 1 hour at 350* . Remove from the oven and let sit for 15 minutes. Cover with plastic wrap and refrigerate for 4 hours.

I am making a batch of bean, sausage, and spinach soup. Crusty French bread and red wine should do the trick.

An extra thick Porterhouse on the Q, sweet potato tots and a humongous glass of red wine. Finally my halls are all decked along with my porch and even my patio. Dessert just might be some egg nog with a wee bit of Myers's Dark while I trim the tree.

two breakfast everything bagles with spinach, tomatos, pickle, swiss cheese, ham, egg white, low fat mayo
and cheese sticks...

i had to fill up my tank so i decided to partake of food and grab some gift cards for christmas to increase my gas discount... my $0.30 a gal off translated into a savings of almost $3

Doing my favorite kind of hotel shop; nice fat F&B budget with no report on room service or breakfast meals! Steak,mash and green beans with a nice red wine. No fee but tons and tons of rewards points and a simple report. Happy camper me!
