What are you having for dinner?

I thought you would like to know that hospital food has come way up. I was there for a full week December 2-9 and we always had three choices. Some of mine were steak with fresh green beans and blueberries, grilled salmon with asparagus and fresh strawberries, and roast turkey with cranberry sauce and stuffing. And the service was always top notch!

I've been playing around making homemade pot pies and tweaking flavors for a while. I just made the best one yet, and I have to write the ingredients somewhere so I don't forget since I don't use recipes. Bonus: if someone else makes it, you can try it and give me some feedback.

I hate making pie crusts, so I cheat and buy them. I use a cake pan for a "deeper dish pie".

Filling: Some leftover Thanksgiving turkey (I don't measure. I think it it was a bout a half of a quart-sized Ziplock freezer bag)
A handful of cooked bacon, broken into small pieces (um, IDK 7 or 8 slices?)
An entire bag of frozen mixed vegetables 12 - 16 oz. or something (diced carrots, green beans, corn, lima beans...)
1 can Campbells Cream of Chicken & Mushroom soup
1 can Cambells Cream of Chicken with Herbs soup
Minced onion (1/4 cup-ish)?
Minced garlic (maybe 2 Tblsp)
Fresh ground smoked salt to taste
Fresh ground pepper to taste
celery seed to taste
Dried parsley to taste

Just mix and taste, add more, mix and taste...
Baking time around 45 minutes or so at 350 (turned up to 400 last 5 minutes to brown crust)
Don't forget the egg wash and steam holes on top crust.

Sounds good LJ but I'm curious...did you add any liquid to dilute the soups?

No liquid. It thins out as it bakes, but if you like it runny you could add a little broth or cream. Oh - and I used dried minced onion and dried minced garlic - rehydrated in a little warm water since that's what I had on hand. In the past I sauteed onions, garlic and celery first. IDK, maybe that's one of the reasons it turned out better this time?

LJ, that sounds like a lot of ingredients. That's more than one regular eight inch cake pan of pie, right? How many?

Just one, Mary. It might be a 9" pan though. Here's a pic of one of my first ones:



The bottom crust doesn't drape over the edges; it just barely comes to the top of the sides. Fill it (it should all fit) and then top with the other crust. I tuck the edges of the top crust behind the bottom crust and pinch. I don't even bother attempting to crimp the edges or make them look pretty. There's usually an excess and I don't have the patience to mess with it. I just slap the egg on top and stab it a few times. I'm sure others could make it look quite pretty.

Burger shop for Mrs. Trash & I for lunch, then burger shop for Trash Jr. for dinner. Tomorrow's dinner shop is at a bar & grill place w/ pretty decent food. 'Tis the season to eat plenty...
We brought home the shells of three lobsters from a special Christmas Eve dinner. My sister is turning those into the broth for her famous lobster bisque! Add a big salad and wine and it will be dinner.

Meatless Lasagna, homemade but I did not prepare it. My son came home with a lot of food from her girlfriend's family
and I just have so much in the fridge. They even provided grilled mushrooms, grilled eggplant, grilled carrots and potatoes.
But I came home and brought miso soup, so dinner is complete. Dessert is blueberry cheesecake, also homemade.

I've placed all the seafood, including lobsters, crabs and shrimps in the freezer. And oh, various types of cheese. There is much too much food.
Driving 260 miles to home with shops along the way and not much memory of what is in the freezer, so who knows?

I think that I'll be drinking my dinner once again tonight.
We went to a political banquet tonight, they had roasted chicken as well as prime rib, oven roasted potatoes, green beans, ceasar salad and five kinds of pie and four kinds of cheesecakes. It was fabulous and for once I didn't have to cook anything. Nice to take a day off sometimes.

Tonight was some braised country-style pork ribs, rice pilaf, steamed vegetable medley of cauliflower, carrots, onions and snap peas and some baked beans just for the heck of it.

I ate some leftover of a beef stew with peanut butter sauce I made for a party last night. There was no leftover of the batch I took to the party but I saved some at home to introduce it to my son. He liked it and ate a full bowl.

I cooked oxtails, skimmed off the fat from the slow cooker and added eggplant pieces, bokchoy, green beans and peanut butter. My son ate it with rice but I ate it with bread. Had fruit salad for dessert.
Pot roast with gravy, mashed potato, streamed fresh broccoli.
