Tonight, from the backyard, tomatoes and basil, turned into a bruschetta. Sliced and toasted a baguette for the vessel. Pan-fried some shrimp and asparagus.
I am preparing bread made from cauliflower. I am trying to lessen gluten in my diet. It takes a while to prepare though. Then I will make grilled cheese with the cauliflower bread. I did this before and my son liked it so I bought two huge cauliflower. I hope to make cauliflower puffs which were our appetizer in the last fine dining shop I did.
Grilled quesadillas with leftover smoked chicken and caramelized onions.

Lazy night for us--a BBQ'd chicken from the grocery store deli and some surprisingly good McCain potato pancakes.
Pizza and an oooooooold movie. The movie is better than the pizza.

That cauliflower grilled cheese turned out well that I tried it again. That was our dinner. But I used mozzarella cheese instead of old cheddar to lessen the fat. And I had a lot of sliced cucumber which came from my friend's garden. Hot water with lemon as my drink. My son had 'turon' which is sliced plantain and a piece of jackfruit sprinkled with brown sugar and then wrapped in egg roll wrapper, for dessert. I used coconut oil for frying.
Italian peasant food: Eggs baked atop homemade marinara sauce with melted parmesan cheese in individual bowls.
Really in the mood for some cooking therapy today, extra cheesy scalloped potatoes, 1/3 pound burgers smothered in grilled onions, mushrooms and swiss cheese, PLUS eggplant parmesan (Yes, went cheese crazy today), tossed salads topped with fresh tomato and cauliflower, freshly-picked blueberries in a pie for dessert. Enough planned leftovers to take us through part of the weekend.

We are doing a 5 Guys so my kitchen is already cleaned and will stay that way tonight.
Ah.........5 Guys Night. My husband gets the fries and some fruit and I am still full from the burger. What else can you order there that's good?
Our order is usually a cheeseburger, a hot dog, a little fries and a soda. Then there is a cup for water. They do a darn good kosher hot dog and with raw onions and relish it needs just a little help. I have packets of spicy mustard from a shop we do elsewhere that set off the hot dog perfectly or getting the pickles with the relish and raw onions does a good job. I always order the cheeseburger since that is 'my meal' per the receipt. What actually happens at the table depends on how hungry I am or he is. And some nights it is a 'fifdy-fifdy'. I hope you are not just taking the fries home to him but rather invite him along. The fries are at their best when you get them.
Pasta with an uncooked tomato sauce. Tomatoes, olive oil, garlic, basil from the garden and some toasted pine nuts. Since the entree is meat-free, dessert is a dark chocolate bar with smoked salt and BACONsmiling smiley

We had rigatoni with meat sauce along with meatballs and Italian sausage.
This must have been pasta night--spaghetti with Italian sausage here. Green salad and garlic bread.
Indeed! Linguini with fresh pesto sauce was our entree. For the sauce we harvested a ton of fresh basil and decided that pine nuts were too expensive so we used cashews and liked them better.

But tonight is different. Overnight I made my big crock pot of caramelized onions so tonight are some lovely rib eyes done on the grill then topped with caramelized onions and sautéed mushrooms. Twiced baked potatoes and fresh broccoli. Made up some banana ice cream for dessert.
Caramelized onions in the crockpot? That's brilliant. How long do they take? And how long do they keep? Assuming there are ever leftoverswinking smiley

I make a big pot at a time. Monday I had a shop I had been waiting for because it is a restaurant size packages place. I got a nice size bag of large Spanish onions. I ran probably 3 or 4 pounds of them over my mandolin, seasoned with a little salt, a little olive oil and a little melted butter and completely filled my large crock pot. I put them on low overnight and this morning they were not quite ready so I gave them probably a total of 12 hrs before turning them off and just letting them cool in the crock. I used a nice scoop of them for the steaks and then zip lock bagged scoops of them to freeze. Once frozen the bags will be collected in a big freezer zip lock to prevent smells from getting into everything else. I can then take out a meal portion at a time. I did leave the juice and some onions in a covered glass in the fridge because that will be used instead of 'broth' for some pasta or rice in the next day or two.
While I rarely use a crockpot, I frequently use caramelized onions so this works. Being able to freeze them is just that much bettercool smiley

We like them reasonably mushy, so if the cell structure collapses more in the freezer it is no big deal. I usually thaw by dropping a zip lock in a cup of warm water because I don't like nuking in plastic.
We just have Bread and peanutbutter, Yum! smiling smiley
Whatever Homewood Suites free evening spread offers. (But taking along some alternative in case they offer sludge.)

Making stacked beef and bean burrito (like a stacked enchilada) with chipotles in adabo and diced green chilies. Blueberry crisp for dessert. (leftover blueberry crisp for breakfast!)
