What are you having for dinner?

Made chicken parmesan tonight with lots of added zucchini,peppers, onions and mushrooms, rice pilaf, tossed salad and a cinnamon streusel black raspberry coffee cake.

Had some leftover hot dog buns, some provolone slices and some aging button mushrooms. Shaved a frozen rib eye, pulled out a pack of frozen caramelized onions and made Philly Cheesesteaks. Yummy.
I made Dr. Pepper Chicken and Italian roasted potatoes for dinner tonight.
I was taken out for a birthday dinner to pleasant casual restaurant that has not been shopped in years. Nice surf and turf dinner with really nicely varied salad bar. All was well until the bill was presented and the server started talking 'out of the blue' about how slow it was and she was a single mom now with a 5 year old and she was two payments behind on her car [hint, hint, tip big, hint, hint]. She just about got $0 for that little performance.

Anyway, this place had coconut shrimp that were good and with a familiar flavor. Did you ever make 'Angel Bread' as a Girl Scout? You dipped a piece of white bread on one side only into sweetened condensed milk, then dipped it in coconut and ran it under the broiler to toast the coconut. That was the flavor of the coating on the coconut shrimp.
Like @Flash, we had dinner at a restaurant--one we had been to a few years ago and hadn't planned to return to. But, a shopping assignment with a very fair reimbursement lured us in. We too had coconut shrimp--they were huge (oxymoron!), but they were a bit tough. Hubby had prime rib--ordered medium rare, but cooked medium. It was not very tender. I had a very flavourful filet--ordered medium, but cooked medium rare. Somehow I think they got our orders confused! Pretty good meal, but not good enough to get us back again.

I am staying at a Hilton Garden Inn in a major FL city, reimbursed but not because I am shopping it (I am not.) To my utter astonishment, last night's hotel dinner was excellent: tender pork tenderloin with a savory brown sugar and raisin sauce, mashed potatoes with brie, sour cream and scallions, and perfectly steamed baby green beans. Simple and delicious. And a bargain at $17!

We don't have them in Canada, but in the winter we are in Florida. Tried them a couple of times and will go back.
Tonight I made a spicy sausage skillet that has (besides sausage) onions, garlic, Rotel, cream, broth, noodles and cheese. Hubby and I each had 2 helpings!
A beef stroganoff and fresh broccoli here. Cheesecake and coffee for dessert.
Trying a new recipe for corn "carbonara." It uses fresh corn on the cob as a substitute for the eggs. Not to worry, there is plenty of cream, bacon and Parmesan to keep it from being any healthiersmiling smiley

Interesting notion. I'm not sure how I see that the corn would adhere to and set up on the pasta like egg does. Let us know how it works out.

By popular request here a couple of rib eyes are headed for the grill this evening and I'll do twiced baked potatoes with them and brussel sprouts.
The carbonara was okay. If the corn was fresher it may have been better. Another problem is it ended up a little cool since the sauce is raw. Cooking it with the pasta for a minute or two like I would with real carbonara would probably solve that problem along with taking some of the crunch out of the kernels that were left whole. The viscosity was similar to one with eggs. After cutting the kernels you take the back of the knife to scrape out the last bit of pulp and the corn "milk." It all gets blended up with cream and half the kernels. It ended up much thicker than I expected. All in all, worth trying again with some tweaks. Next time I will definitely cook it for a couple of minutes and may just blend all the corn.

Yes, cooking it a bit with the pasta should help some of the sugars in the corn caramelize a bit. In fact you might want to take the corn you don't blend with the cream and fry them a bit to slightly dry, crisp and brown them before mixing into the dish.
I just shredded a roasted, smoked pork tenderloin. Later in the day I will assemble a stacked meat and bean burrito with a mix of shredded pork, refritos, diced tomatoes with green chilies and chopped chipotles in adabo, topping it with enchilada sauce and a cheese mixture. After the peach crisp comes out of the oven (my idea of a birthday cake, lol) that will go in. (For the recipe for "Cheaters' Smoked Shredded Pork" check out thesplendidkitchen.com. You can put it into the crock pot at night and let it cook on low, perfuming the house with glorious aroma by morning!)

beef brisket marinaded in jack daniels bbq with mozzarella and bread.. killer... the beef was half off at walmart clearance.

Getting creative tonight with some leftovers and a few first-overs. Going to make some fried chicken and team that up with leftover rice pilaf, Peppers stuffed with a mixture of refried beans/ onions/shredded cheddar and baked with a rich topping of salsa to go with it along with fresh corn on the cob which will be picked 5 minutes before cooking. Oh yes, will snag some fresh tomatoes on the way back from my field to slice up too.

Cleaned out the fridge. Assembled a dip of refried black beans, roasted corn, and shredded chicken seasoned with cumin, garlic, and red pepper flakes. Made guacamole and served with shredded kale, green onions, celery sticks and oven-fried corn tortillas.
Yes, it was clean the refrigerator night here as well. The foundation was a frozen pizza and bits and pieces of leftover chicken parmesan, ham, salami, bell peppers, caramelized onions, cheese etc. found their way onto a sad little crust that then was helped with a little EVOO and herbs.
I was fresh out of leftover enchilada pie so had Costco roast chicken (cold), cole slaw and potato salad on our 56th day of temps in the 90s with humidity above 80%.

On the cool side today, I have a pork roast in the oven with a side of dressing, fresh corn on the cob tonight and a steamed broccoli/cauliflower mixture.. An apple pie for dessert.

If I am back in town I will cook something. If not, I will look for a quick-to-report dinner shop.

I am working my way through that Costco roast chicken, and, since it has turned blessedly cool, tonight it will be chicken with dressing, gravy and acorn squash. My homemade peach crisp for dessert.
