What are you having for dinner?

I made two big meals today. Lunch was black eyed peas and greens. For dinner I thawed some polenta, browned it in a skillet, and topped it with a mixture of green beans, tomatoes, onions, garlic, and chicken sausage.

How funny. Tonight was the New Year's tradition of black-eyed peas and red cabbage. Last nights dinner included polenta. Great minds, LOL!

For New Year's eve I made a killer mac and cheese, some shrimp sauteed with onion and garlic in butter, butternut squash with brown sugar and a pumpkin pie. New Year's day was a baked ham, more of the mac and cheese, sauerkraut and more of the pie.

Well, I started out with a few of Stover's chocolates for the appetizer, entre was a can of vegetable soup and the dessert (to make up for the awful soup) is strawberries and ice cream. Will probably polish it all of with a nice bottle of Coke!
Last night: leftover pot roast and gravy, mashed potatoes and steamed carrots. Tonight, homemade lentil soup with ham, crusty French bread.

Spinach casserole sounds really good. We are having leftover night. Whatever is left over from the last 3 nights is supper.
It is very cold with blustery winds strong enough to topple anyone who may be frail. Time for comfort food!

I have made the filling for lamb shepherds' pie and the mashed potatoes topping and will soon assemble that and bake at 400 F for about 30 minutes! This is my first effort with tinkering with the 4-6 very different recipes that I have recently read on line. Have yet to decide whether or not to add cheese to the mashed potatoes. Sacrilege to some Britons; but I am from Wisconsin. (Eat cheese or die!)

I think tonight I'll pan fry the leftover little slices of ham, jasmine rice with blackeyed peas, parsnips and apple turnovers.

Do you make your own jerk seasoning or do you buy it? Do you have a brand that you like? I just found a recipe for jerk pork that I would like to try but I have never cooked anything with jerk seasoning.

No, I don't make it myself. I wish I could. My Mom does and its always amazing!! But the one closest to hers that I swear by is called Walkerswood Traditional Jerk Seasoning. Its an actual wet seasoning and not the nasty, watered down sauce that some places make. They have it in mild and hot.

I'm cooking a turkey and freezing most of it for quick meals during tax season. Dressing and green beans.

Having left over rare steak, twice baked potato and green beans tonight.

The big slow cooker is doing a 12 hour overnight stint making chicken stock from bones and feet for a recipe that I will do tomorrow. But, much of the stock will be boiled down to concentrate and frozen for future use.

Are you making bone broth? I don't know too much about it but I've heard that is supposed to be really good for you. I've never tried it.

Chipotle for dinner. It's never crowded these days, so that's an added benefit!
