Going to try my fish technique on a couple of chops. A real chef would be horrified, I'm sure. Pork Chops Poeler with a rosemary and chive Burre Noisette. Or maybe green onion and tarragon. Or rosemary and green onion. Or chive and tarragon? Marjoram? IDK.

So much for the chops. I was out longer than expected and came home too tired to cook, so I decided on Bear Creek soup that I keep for emergencies in the pantry, and some scrumptious Reuben sandwiches with Boar's Head corned beef. Hubby put the groceries away last week and I found the 1000 Island dressing in the pantry instead of fridge - it's one that requires refrigeration because they don't use preservatives. So... I sure hope hubby got my text to bring home a pizza on his way home from work. tongue sticking out smiley

Dang! That sounds good! Love any kind of greens and lentils too. Could I get the recipe please? Curious, did the lentils soften with all the acid in the BBQ? Or did you add them pre cooked?

Veggie Lasagna from BJ's Wholesale. I was too lazy to do a fine dining gig that was paying $35 fee plus reimbursement!

(By the way, though not really close to homemade, the Michaelangelo's frozen Vegetable Lasagna that BJ's sells is not bad in a pinch. Much better than many brands.)

Will send you the lentil recipe in a PM. Lentils were partially cooked before they went in the crock pot. Greens came from a can, but I added onion and garlic.

Alaska salmon baked with garlic, dill and olive oil, then topped with cheesy mashed potatos and baked until the top is brown and bubbly.... a sort of fish pie, plus steamed fresh asparagus.

Meatloaf!!!

Made two huge loaves with ground beef and pork sausage. Put in lot's of pureed frozen leftovers (like rice pilaf, collard greens, etc.), that were still good and very yummy (but we just got sick of it because I cook in bulk like there's still 5 people here and it's just us two). Added TVP because I hate soggy meatloaf. Topped with homemade cranberry ketchup.

Yum!!! Sounds scary, but it's really so good you'll stuff yourself. Green beans also of course!

Bacon-wrapped filet mignon on the grill, jello salad and French bread. The jello salad, while it tasted great, didn't really look very appetizing. My 8 year old named it "Jiggly Brains" and then promptly ate 3 servings of it. smiling smiley
Frozen pizza. I'm exhausted from a long day of plotting out and moving my container garden. I have to finish tomorrow so what can I do for dinner then? Hmmmm....

Cleaning out the fridge and adding some fresh grape tomatoes resulted in a dang good steak salad with ranch dressing and homemade croutons. It was my first shot at making ranch from scratch and isn't half badsmiling smiley

The last of the Easter leftovers (ham steak, Yukon God new potatoes, asparagus with balsamic vinegrette). There wasn't quite enough, so I made a small casserole of baked beans, too.
